Apple Nut Porridge

It’s Sunday morning and I’m hungry and totally unprepared for breakfast. Eeek! So, for the first time since it arrived in my mailbox two weeks ago, I opened Ani’s Raw Food Essentials to find some inspiration. Her Raw Food Kitchen was my first ever raw recipe book so I have a bit of a soft spot for her and she has a lot of easy recipes. Success! On page 64 I found her Apple-Nut Porridge… I just made a small modification to remove the dreaded agave… a good rule of thumb: use dates instead!! 

This required absolutely no prep and uses fairly common ingredients for a raw foodie. Simple, fresh and filling = just what I needed! Her recipe makes enough for 4 people but what I have written out below is a good size for one…

Ingredients:

  • Small handful of your favorite nuts – I used walnuts as I’m having an outrageous love affair with them at the moment
  • 1 apple, cored and diced
  • 1 tbls flaxseed meal
  • 2 dates - soaked overnight to soften (as required; fresh medjools are so soft they blend well anyway and are my fav.)
  • Goji berries

Instructions:

I didn’t think my small batch would really fit in a food processor so I threw everything except the goji berries in my Blendtec and pulsed it until it was chunky (this required me loosening it up between pulses).  I put it in a bowl, sprinkled some goji berries on top and voilá! Breakfast.

Ani also suggests adding chopped dried figs and adding your favorite nut mylk – I didn’t have figs and thought mylk was unnecessary (and was too lazy to make any!)
