Mimi Kirk has done it again! Just when I thought I’d become ‘disenchanted’ with raw foods (i.e., lazy), I found a yummy salad dressing in Mimi’s wonderful book Live Raw.
It went down like this…
I spent a lot of time in the kitchen yesterday preparing vegetarian lasagna – my partner was having a colleague over for dinner and while he is vegetarian I was reluctant to prepare something raw, plus the bf is not a huge fan of raw foods. I also made butternut squash bisque to start, and figured I’d just have that for dinner as well.
Then at the last minute, I realized I needed a salad to go with the lasagna. Boring. I know I’ve mentioned it a lot, but I don’t really like salads. In a last ditch effort to find inspiration for the salad (the lasagna is so good it deserves an equally good side), I had a quick flick through all my raw books for an interesting dressing. Honestly, I was trying to stay away from Mimi’s book for a while as I talk about her a lot – that’s what happens when you have a girl crush though I suppose :) – but it wasn’t until I saw her recipe for Chop Chop Salad that I could bring myself to start preparing anything.
I liked it because I felt it wouldn’t matter if I didn’t have all the salad ingredients she suggested, and that I could use the random ingredients I had at my disposal without affecting the final outcome. It also didn’t require any fancy things that required a trip to the store – win, win!! Everyone loved it – the dressing was light but filling, and tasty without being overbearing. I drowned my salad in it and it made what I usually think to be boring salad ingredients interesting.
I haven’t posted the recipe as I really think a. I should ask for permission first, and b. you should just buy her book!
