raw falafel, no beans!

I love these falafel patties so they were the perfect thing to make yesterday to kick start a week of all raw food – something I haven’t done for an embarrassingly long time, and definitely something I need to do more often – I miss it and I just don’t feel as good as I used to.

These are a little sentimental for me – first made for me by my very good friend Brooke. Whenever I make them I am reminded of her, which is useful now she has moved very far away. Miss you Brooke!!

Anyways… here is the recipe – you have to, have to try these out.

Ingredients:

  • 2 cups almonds
  • 1/2 cup cilantro
  • 1/4 cup parsley
  • 4 tbls lemon juice
  • 2 tbls tahini
  • 1 tbls olive oil
  • 1 1/2 tsp ground cumin
  • 1 tsp sea salt
  • 3/4 cup water

Instructions:

Blend almonds in food processor until fine. Add remaining ingredients and blend until  smooth. Roll mixture into small balls and place on mesh dehydrator screen. Dehydrate at 105° for 4-5 hours or a little longer if you want them crispy.

… I usually half the recipe if I’m making them for me – makes about 12 patties (I flatten the balls, personal preference). They keep a few days in the fridge and they are great for lunch. I also made sour cream yesterday so am excited to try the falafel with sour cream! Might actually get a lettuce tomorrow to make falafel wraps… will keep you posted.

    • The recipe didn’t call for soaking specifically, but if you are committed to soaking your nuts (and I wish I was more committed!), you would have to soak them (almond are for 8 hours) and then dehydrate them until dry so you could make a flour…

  2. How much almond flour does it make? I have so much left over from making almond milk. id rather just use that instead of making more with my almonds.

    • That’s a great idea Kailah! I think 2 cups of dried nuts makes about 1.5 cups nut flour but you could start with a cup of your almond-milk pulp to the rest of the ingredients and add more if you think you need it.

  3. Do you have to dehydrate the recipe or is it just fine fully raw as well?

    • HI MaryLynn – it tastes fine to eat without dehydrating but they are awfully nice when they’re a little bit warm ; )
