apple + ginger juice

After quite the hiatus, I’m a little sorry to say my first blog is about one of the most simple pleasures… apple juice. On the flip side, maybe that’s exactly the right entrance point for me. Having a broken ankle is making exciting new raw food prep hard so I’m not spending much time in the kitchen, and when I do it needs to be quick as I can’t hop around for long periods of time without becoming dangerously tired (literally).

That being said, my apple juice this morning was glorious!! Fresh, crisp and perfect to sip on as the spring sun streams in the windows.

Life does not have to be complicated :)

Ingredients:

  • 6-8 large green apples, cored but not peeled
  • 1 inch chunk of ginger, peeled*

Instructions:

  • Juice, and enjoy in your favorite glass

*Be careful with the ginger. For the uninitiated, this may be too much – it’s pretty spicy because there’s nothing to detract from it. I do love that ‘it’s good for me feeling’ I get from it though!
