Banana and Strawberry Crepes

A wonderful friend of mine was teasing me this morning when I posted a blog for cheese sauce on Shrove Tuesday instead of a raw vegan pancake recipe. I promised to do some research but I didn’t have time to do the required dehydrating to try a new recipe so I’m pulling out a draft recipe I started writing back in 2010 for the occasion. It’s also a good reminder to make these again soon, as I do remember them being really good!

I had to look through all my raw vegan recipe books to find this recipe again and of course, it was in the last one I checked! It’s from Alissa Cohen’s Living on Live Food, which is a wealth of good recipes if you need some inspiration :)

And don’t stress – the instructions make it look more complicated than it really is; you just need to allow up to 14 hours for dehydrating.

Ingredients for crêpe shells 

  • 5-6 ripe bananas

Instructions for crêpe shells 

  • Blend bananas in food processor or blender until smooth
  • Spread onto teflex sheets in a square about 1/8 inch
  • Dehydrate for up to 14 hours – they should be solid but not crispy
  • Cut into strips (approx 4″ by 2″)

Ingredients for filling

  • 1 cup macadamia nuts
  • 1 cup cashews
  • 1 large lemon
  • 4 tsp raw honey
  • 2 tsp Bragg Liquid Amino
  • 1 tsp vanilla
  • 2 tsp water

Instructions for filling

  • Blend all ingredients until smooth

Ingredients for strawberry sauce

  • 1 1/2 cup strawberries
  • 1-2 tbls raw honey

Instructions for strawberry sauce

  • Blend all ingredients until smooth

Assembly

  • Cover plate with thin layer of strawberry sauce
  • Scoop filling onto banana crêpes and roll up
  • Place crepes side-by-side on the plate and garnish with more sauce

And voilà – raw, vegan crêpes, with 5 minutes to spare before Shrove Tuesday comes to a close… but like regular crêpes or pancakes, these are also good as a special occasion breakfast, or desert. And no ‘Fat Tuesday’ label required for these – they’re totally good for you!!

    As enticing as a ‘classic’ strawberry banana combo may seem… Perhaps our digestive systems are telling us otherwise! + nuts (fat).. and more nuts (more fat)…. + sugar… + more sugar…. Reminds me of a nightmare!
