Beets

If you read my Day 3 juice fast journal, you’ll know that my beet juice caused quite the bathroom commotion, but despite that, I really did like the concoction – sweet but not overwhelming, and damn full of goodness for your body… and who doesn’t love goodness for their body?!

Granted, it took me a long time to get used to beets; years. That earthy taste and the awful mess they make (or that I make with them) just didn’t appeal to me but I kept at it, putting them in my mother’s breakfast juice recipe nearly every day. I would buy beets loose so as not to have the leaves to contend with (I knew they were good for you, but surely they were too strong to juice?) and my boyfriend always bought them with the leaves on… I would let them wilt and die.

Then, on Tuesday I found a page that reminded my how much I was missing out on for not juicing the beet greens too and I felt sufficiently guilty and wasteful; and, being on a juice fast, decided to give it a go. The result was a magical, wonderful pink juice! I’m finally in love with beets but can’t drink them alone, so here’s my beet juice concoction…

Ingredients (makes 1 liter)

  • 2-3 large beets with the leafiest greens you can find attached to them
  • 1 large bunch of parsley
  • 2 large red apples
  • 4-5 carrots
  • Hunk of fresh ginger

Instructions

  • Juice everything!

… and feel the goodness surge through your body ; )

  1. Not only is Beetroot good for you and high in iron it replenishes the blood lost during a women’s period and an orange, ginger and beetroot juice at 2pm gives you extra energy and works overnight to clean your bowel out the following morning.

    • I would recommend a masticating juicer Carlie, which this one is. I haven’t heard anything about this specific model but it looks like Amazon has then discounted for $209 which is cheap for a marinating juice – they usually go for $400-$500. Centrifugal juicers are cheaper but have some drawbacks like killing the enzymes and requiring you too drunk the juice soon after juicing… there’s a lot of comparative research out there.

    • Thanks for sharing John! Each to their own I suppose, we all need to find what works for us. I personally love the juice fast and have never felt.so good, mentally or physically but it took a few tries which is not for everyone. Even without fasting though, I think juice has a place in a healthy diet.
